Riserva 2018 GRAPES: 90% Nero d'Avola DOC and 10% Syrah DOC
Vinification and Aging: Syrah is harvested in the last ten days of August, Nero d'Avola in the last ten days of September. The grapes are hand-picked in 14 kg crates and vinified in steel, with maceration with the cap exposed, at a temperature of 25°C for about 10 days. Once malolactic fermentation is complete, the wine is transferred to oak barriques, where it ages for about 24 months and then spends a further period of aging in the bottle.
