Syrah, an ancient vine that has been cultivated in Sicily for over fifty years, is now considered native. After being hand-picked, the grapes undergo fermentation with the berries immersed at a controlled temperature. They are then softly pressed and refined first in steel silos and then in French wooden barriques for about six months.
